Kudzu. It's edible, quite nutritious and your chickens may actually have trouble keeping up with it. It's not evergreen though.

I have thornless blackberries. it's not evergreen but still provides cover and shade all year long.

oh and they get the blackberries on the bottom and i get the ones on top. bonus... they eat the japanese beetles
