Waddles?

I just noticed lately that one of my 2 guineas has a blue waddle under the neck. Not like the ones on the cheeks. Does that mean what sex it is? She does the buck wheat sound all the time like the older one (without the blue neck waddle). And after a few months is it to late to tame them to be petted and come to you? The only problem I have with them now is they like the neighbors flower beds. I can't afford to put a fence along the front of my place which is an acre. Thanks for any info. :)

I have male and females and none have a neck wattle, just the cheek ones. Does it look like this? I have never seen this before and only found it in google images. I don't know what it means.
I have quite a few that have that skin under their waddles. Its not a waddle its just loose skin. Genetics would be the answer to why it occurs.
