I am in the process of building a coop. undecided what to do with the walls inside the coop. Paint, or use hardboard. I'm looking for something that will be easy to keep clean.

Nest boxes. My coop is 6x8. I'm not sure if it's better to have the nest boxes bumped out of the structure or inside with just a door to collect the eggs?

You live where it gets cold. If you bump them out it may be more likely to freeze the eggs. You don't want frozen eggs.

I have paint on the walls in the coop I built - my 4 x 4 and I don't think I can ever clean it really well. I think I would just have to repaint it one day.

The inside walls can be untreated and unpainted. The exterior of the coop is what is important to have painted or protection from the elements. An exterior egg box is very nice to have! Saves space in the coop and it is so much easier to reach down under a hen sitting on the nest to collect eggs. My coop is not insulated but I did go the extra mile to add rigid insulation sandwiched between beadboard for the nest boxes. This keeps out heat in the Summer and cold in the Winter for the nests.
