If you want your birds to have more fat within the muscle, you need to feed them a lower protein feed way before the last week or 2 before butcher. If you hit them with more corn at the end, they will accumulate most of the fat on the neck and on the fat pad and around the gizzard. It's my understanding industrially raised chickens are put on a lower protein ration at 3 weeks of age which promotes that innermuscular fat which you are looking for, resulting in a "juicier" cooked bird.

What % protein feed did you raise your birds on?

The French have been dealing with this issue for 500 years. Google "Bresse chickens" and you can learn how they convert a lean-muscle free-range bird into a fat and juicy broiler anybody would love.

Even Niman Ranch, the leading proponent of grass-fed beef in America, confines their cattle for the last several weeks of life and feeds them a heavy corn diet. This marbles the meat before slaughter.
