The lunchroom does have a salad bar - I think it is their way of keeping the perishable food bills to a minimum. Instead of putting plant materials on kids plates, they have the salad bar with a tiny bin of pale yellow iceberg lettuce that looks dry and pinkish on the cuts (yeast), some carrot slices, a bit of broccoli and sliced apples. I sometimes see kids take apple slices, but nothing else. It looks like one family-sized bag of low quality salad mix lasts about a week - makes for low produce expenses.
What you need to do as a responsible parent as you are, is to feed her lots of wheat, and then take her to a doc who can do blood tests or colonoscopy to check for sedimentation rate on her blood (indications of IgE & IgA antiblodies present) and biopsy the colon (a tiny tiny snip) and they have a wee camera and can see if the intestine is scarred from immunal scalding..and developes "ribs" and possibly 'intercessions' where the gut folds in on itself (very painful and life threatening) and /or "strightures" which are ridges of scarr tissue that squeeze the gut shut and do not allow proper flow.
This (these) diseases are not to be toyed with.
You do not just "let" her eat whatever she wants.
She is a child and has no idea she well maybe ruining herself for life.
Speak to your GP, make an appoinment with a good gastroenterologist, feed her lots of wheat AND THEN take her in to get blood tests and/or a colonoscopy.
I suggest the colonoscopy, it is less stressful on a child.
She will have to drink alot of watery gatorade which will expell the intestines..and you must not let her eat anything overnight, and at the gastro office, they will give her a little cup of drink..and POW it is all over.
If her eating is out of your control (as it sounds like she gobbles behind your back) then maybe she needs to be home schooled for a while.
One thing to remember here: If a person has celiac disease, and is eating gluten, then the gut is scarred and fried constantly, digestion is BAD, and absorption is nil or none.
So she may be able to absorp some fats, but little to no vitamins or minerals depending on the area of the gut attacked.
Each length of the intestines is designed to absorb some vitamin, mineral or protein/fat.
Most folks do not realize if a hunk is removed, you still have 23 feet, right ?
Maybe, but it maybe 23 feet unable to absorp protiens, or vitamins..so what happens is the person is starving!
The body is getting NO vitamins so the hunger drive is great.
In the process of stuffing herself, she could well be killing herself.
Never satisfied, a celiac child can keep eating and eating ...and the scalding to the intestines is like as if she drank a gallon of draino.
It is important that you as the parent, look into the disease further, and keep her away from wheat, until she is further tested.
