Water heater thermostat question.

How well do the water heater thermostats work for homemade incubators. Are the better than, or as good as the wafer type?
I'm thinking about making an incubator and want to use the best setup.

Some people say the wafer is better. But I have the water heater T-Stat and it worked just fine for me.

How large is the incubator you are planning on building?

The wafer is better but harder to get.
