..... I dumped all the shells and leftovers into a pile in the yard. My chickens are 10 weeks old if they pick at it they will be fine right? I'm going with the method I can dump anything food-wise out there and if they eat it they can and if they don't need it they can't.

Should be fine as long as they have grit. I gave my adult birds some lobster bodies a couple weeks ago, they tore into them. The littles were still to small for me to try them with lobster, but 10 weeks should be fine.
