It is pretty cool, huh?

We just got the first eggs last week from our flock. It is sort of special to have that first breakfast with your own fresh eggs. Hey, let me tell you something that is good with scramble eggs: Fried yellow squash! I got one out of the garden the other day and it just occurred to me that the flavors would compliment each other, and boy, do they ever. Try it and you will love it. That is, if you like squash.

Ok hope it doesn't hyjack the thread too much but my yellow squash has all died not matter how many I plant they get vine borers and I don't use poison and haven't been vigilant enought. But my eggplant a small striped variety has been booming. So I add eggplant to scambled eggs and yes yummy.

Can't wait to try it with my fresh eggs!!!!

I need to put all these tomatoes that have ripened within the past few days in the dehydrator. I love "sun" dried tomatoes in everything. Pasta, scrambled eggs...
