great job! I always bag & freeze immediately after chill down. Let rest after defrost, that way only one or two resting in frig at a time.

I like to keep my water at 145 , DH kills scalds and runs the plucker , I finish cleaning them and cut them up . He let it get a little too hot and the skin tore on three of them.

They seem to tear easier when that are young. I think that they do clean better if they are a little older.

@Katy, how long do you let them rest after defrost?
