Yeah...I would think maybe rat too..
I had a weasel go right through my chain link and kill my adults before I started locking them in at night.

Also, my weasel kill was quite different on my chickens that yours. Based on what you posted, i might think rat also. They tend to gnaw, weasel remove the insides usually.
