What age do cockerels start getting tough

I have an 11 week old cockrel that I want to butcher. He was top dog in a pen with 4 older cockrel and 7 pellet s. He is a lavender Orpington and has feather issues so I don't want to use him for breeding. He was so wary of me I was surprised to catch him. So, should I butcher him now or Caponize him and wait? Will be be tough either way?

It's too late to caponize him. If he's a problem then process him. You need to let the meat rest in the fridge for a few days or it will be tough.
