What age do you process cockerals? (dorkings to be specific)

I've got 3 young dorking cockerals that will need to go.

What age or weight should they be processed for best results?
 
We just butcher ours when it looks like there is enough meat on the bones, although we butchered a few Polish, Lakenvelders and such that never would have gotten too much meat on theirs. I called them chicken on a stick, like what you buy out of those convience stores that have food.
