What age to dispatch?

Is there a "best" age to dispatch turkeys? Is it better to do it on a molt? This is our first year with turkeys and we planned to wait until it was cooler out but we are open to whatever whenever.

depends on if you want a big bird or a little one. Most people say BB bird at 5 months and heritage birds around 8 months or more.
