What age to process roos?

What age should I process my roos? I'm not sure what breed they are, as they were in the box shipped to me for warmth. They are 3 weeks right now. Thanks!!!
 
Depends on what you want them for (frying, roasting, chicken and noodles...). They probably won't amount to much until about 16 weeks or so...and after 20 weeks they start to get tougher, making them more suited for slow cooking.
 
So at about 18 weeks they would be suitable to cook whole in the oven? I don't mind slow cooking in crock pot if necessary. :)
