April 17 I purchased straight run Easter Eggers. 8 of the 15 are Roos. At what age should they be processed into dinner?

Doesn't really matter. The longer you wait, the more meat but also the firmer it will be.
Just start culling if and when the squabbling gets out of control.

Some folks butcher as soon as they crow. I aim for around 18-22 weeks. To me, that's the point when they quit adding muscle mass and from then on I'm just pouring feed into them to maintain weight, not getting any gain from it.

I like to harvest extra cockerels around 13-15 weeks, when they are still tender enough(if you rest the carcass properly) for that luscious grilled skin.
Yeah, not much meat but the grilled bones make an excellent bone broth.

That's also about the time they start really causing trouble and as I don't have space for a cockerel grow out area, off with their heads....the pullets agree.
