What am I missing?

Well there are many opinions here. You will have to use your best judgement on which advice to follow.

Chicks need only chick starter (I prefer medicated) and water for the first 6 weeks. Their digestive tract is still developing, and treats may upset their digestive tract or unbalance their diet.

Instead of a thermometer, watch the chicks. If they avoid the light it is too warm. If they all huddle underneath it, it is too cold.

A shallow water dish is a good idea, I use a small flat bowl with a large smooth stone in it to prevent drowning.

Newspaper is indeed too slippery. And pine shavings, hay or other organic materials may be dangerous to investigating chicks. For the first few days use paper towels or (what I use) puppy training pads. When you start using pine shavings get the larger ones, not the fine textured ones.

Thanks again for all the advice. Received a phone call this morning. "Chicks are in sorry they are two day's early they had to come today or not at all the driver was going to be off."

Well good thing I was ready. I have the temp at 94 degrees under the light and they are eating, drinking and pecking at anything they can find. Currently it is paper towel over the pine shavings. I did go with the pine shavings here as they are huge about the size of a quarter or larger. Look like they were off a planer. They were also very soft.

Had to laugh as they found that mosquito's and mayflies were drawn to the heat lamp in the garage, they've been feasting. I did buy some small grit and was told to wait about two days and then just sprinkle the chick starter with it for a week before just supplying it in a separate dish.

Coop is coming along nicely should be habitable by this weekend.
