Well, since we managed to have omlets for breakfast saturday and sunday, and used up some eggs, it looks like it's going to be Italian Sausages tonight.
seriously...after going for 2 months without an egg, all of a sudden all 10 of my hens and 1 duck are laying every day...i'm having an "eggsplosion"!!!
I made a chicken noddle casserole last night with canned chicken, tomatoes (last ones from the garden), fresh chives, fresh parsley (Both from the herb garden) and spices. Topped with cheddar cheese and baked until golden brown. Since I'm on my own while husband is working out of town I will have it again tonight.
