When we get together, we all bring a dish. I'm signed up for a fruit salad this year. Here's what I'm taking...
Sparkling Layered Fruit Salad
serves 8
Layer in a large bowl 1 cup of each of the following fruits:
blueberries
sliced plums
sliced red grapes or sliced & pitted cherries
chopped cantaloupe or honeydew
sliced strawberries
sliced nectarines, peaches or mangoes
small green grapes
raspberries
Cover and refrigerate for at least 3 hours.
For the dressing:
1/4 c. lime juice
2 T. honey
1 tsp grated lime peel
1 c. lemon or lime flavored sparkling water, well chilled
mint sprigs, optional
Whisk together all ingredients EXCEPT sparkling water and mint sprigs.
Just before serving, stir in sparkling water and pour over fruit.
Garnish with mint sprigs, if desired.
