What breed(s) have good roosters?

Just a quick background. I have been raising hens for just over a year. I have kept a wide variety: black sexlink, Road Island Reds, Cherry Egger, Delaware, White Laced Red Cornish, Silver laced Wyandotte, Blue Andalusian, Black Austrlorp, Ameraucana, Dominique, Sicilian Buttercup, three ducks, and four turkey poults. I had one or four of each either laying hens or young pullets. Were we lived no roosters were not allowed. About a month ago we moved to a beautiful five acres in the country. Well, the day after we moved here all but two RIR and the three ducks were killed in a dog attack. Which we dealt with already.

Now we are looking to start over and add a few roosters to the mix. We will be raising from chicks as I don't have an incubator yet to hatch eggs. I was wondering if there were specific breeds where roos were more likely to be docile than others. I know each bird is an individual, but I am hoping to increase my odds of getting a friendly roo. Also could you recommend hens that are more likely to be broody(no incubator and I like the natural way better). I am leaning towards Delawares, White laced Red Cornish, and Black Australorps although DH wants Ameraucanas. I love the diversity of a mixed flock and am open to any breed. :)
