Yes cockerels are males under a year and roosters are males over a year old and the DO crow.

I agree with @peopleRanimals2 about the sexes so far.

Should the roosters be crowing? So far, no one is?

Okay I didn't realize these were the same one, I'm still thinking probably cockeral. And yes, pullets are hens under a year, and cockerals are roosters under a year. Agree with @KikisGirls
