Heya!! Got an EE from a local farm store (Fondly named Peppercorn) and I have 0 idea what color they are or what they could possibly be a mix of! Does anyone have an idea? Shes got a tiny comb and green legs!!

You won't be able to know. Most places make EEs by mixing EE x EE. That is most likely what she is.

Usually EEs start with Ameraucanas, somewhere in their lineage, but are too far confused at this point to tell what else they started with.
