Over the years I've kept many different breeds and X-breed turkeys. Gotta say though my faves are Bourban, Palm and wilds(Merriams, Black, Rio).
I still wanna get Occelated, Sweetgrass, Buff, Pheonix,...
Actually. If I had room I would probably keep all breeds.......& pheasants......& endemic species of grouse and partridges and ptarmigan....& endemic ducks....& geese...& swans.
But.....

Haha I want everything too if I could!! I love my black turkeys they are the sweetest:)

I just thought of this....
Rightnow I have a cpl of Blue Slate. The gobbler is of course "gobbler".
The hen though is just a sweetheart. She'll follow me all around the yard looking for bugs and such in my wake. She'll come to the garden and eat worms and such when I'm working the soil.
I have a Buff Orpington hen that does that too.
But ya, looks wise it's Bourbans, Palms and wilds. And a close second is the bronzes. I ain't much into the sweethearts or personalities of turkeys. To me the more self reliant and 'pretty' they can be and give me meat is more my speed. That did I can appreciatte people liking 'sweetheart' turkeys. .... Or for that matter any bird. I have a female Canada Goose, Meemee, that's such a sweetly. She'll probably be leaving soon though. It's that time of year.
