What color are these quail called?

Don't want to hi jack a thread but my quail look similar to these. Mine are pure white with small black patch on the head of most. The lady I got them from did not know the kind. I looked on here and thought they were A&M's. I butchered some today. My question is: If the breast is white, or lighter meat does that mean they are A & M's and if dark they are English? The breast meat did not look that much lighter when I dressed them. Also some are much larger; a few of the hens are really small. Thanks, maybe the anwers will help you too.
 
100% English Coturnix

They do not look large enough to be Texas A and M Coturnix.

The Texas A and M Coturnix is a color variety that came from the English Coturnix. They are all Pharaohs no matter what color.

Other color variations are:

Fawn
Red Tuxedo
Red Golden

Only a few breeders continue to breed the Texas A and M. I got my stock from Texas A and M and it's hard to find birds to cross with to continue a bloodline..But it is working so far

Texas A and M University Sold some of their flock to the University I was studying at. My professor was working on a genetic project involving the birds.
When he retired, I received the birds.

People have been selling English Coturnix as Texas A and M but the birds are not as large. Just saying...
 
Thank you. I really didn't know anything about raising quail except I had a cousin who raised bobwhites in the past. I did know chukars didn't have the white breast meat that bobwhites do. Since I got these free I really wasn't expecting much. Sounds like you have a rare treasure with you A&Ms.
