What color eggs do polish lay?

Newbie here. I am suddenly getting a "mystery egg" every morning. Smaller (but not real small) & a perfect light brown. Who ever is laying it is doing so at night so I don't hear the bragging. I m thinking it is my old Polish hen Phylis, she is white with a few black speckles . . . is this a possibility? She seems to be the only one who cares when I pick them up.
 
Doubt if she`s laying at night. To determing if a pullet is laying, feel the pelvic bones under(not in) the vent. They should allow you to place about 3 fingertips between them, if she`s laying. If you can`t place but one or two between them she isn`t laying.
 
Just for clarification all Polish lay white?
Ok, I get how to tell on Pullets if they are laying, but what about an old hen? Is there a way to tell with those?

I have a black polish mixed, she lays large blue eggs.
 
Our polish all lay white, but if you have a mix you may get a new color.
We lived in Kuna when my first 2 where babies of Kuna Mora road.
