I just know I would love duck, I love dark meat. It just seems I never see it around here. :confused: I've never seen it in a restaurant or a grocery store.

Fake spring is over, it's cold out there again. it was too windy to clean up the yard yesterday, I had to dodge falling limbs just to collect eggs.

I made a big batch of jerky yesterday, working on the last of the cow as the new one is coming in March. I need to find something good to do with the beef shanks. Anyone have any ideas? I'm thinking crockpot, but need a tasty idea.
Slow cooked beef shanks. Brown a little then sauté mire poix in drippings then toss all in crockpot with liquid. Beef stock if you have it. Thicken the cooking liquid after they are fully tender then serve over wide noodles or rice. Just a thought. BJ’s usually have whole ducks for sale @Sueby
 
Planted a hibiscus :) saw an ad offering a red clematis , so I drove there, the lady is moving into an apartment and also offered me the ( lilac) hibiscus for free, she also offered me a kiwi tree, I can only cut salplings, cos it’s too big to dig out, and in return she will get some eastern eggs from happy chickens :)

Story about beef shanks . My brother worked at a grocery as a teen . He is 80 now . Anyway the owner would buy beef shanks and what they called cod - internal beef fat . They got it cheap from S. America . Ground it into a low cost burger . Housing project nearby . Lots of poor kids grew up eating that burger .
 
Good morning gardeners. It’s a lovely day here in AZ, at least in my neck of the woods. I’ve watered the seeds and sprouts, and the new plants in the xeriscape garden. Hubs is putting the shredder together, then we’re headed out for haircuts and the nursery. He’ll start on the garden arch after that while I work on the shade garden today. Weeds, cleaning stuff up, etc. I’m going to work on the shed Monday after work, it’s a disaster. Then the patio so we can have a fire and get rid of some wood. I’ll going to point out some things to hubs in the front yard and talk to him about that one tree. Take care all, I’ll catch up later.

PS my Gurneys order shipped. Yay!!

I went to my local Job Lots store and scored the last two 50 foot rolls of 2 by 4 dog wire fencing for last year’s price of $39 per roll. It’s only 36 inches tall but anything taller than that I would need a permit. This will be primarily on my south side property line. It will be enough to keep my chickens from wandering off my property and a barrier to keep my neighbor’s from taking casual afternoon walks in my yard. I’m pretty sure I’ll be able to pound the T posts into the ground enough to get this fence up. The bird netting I ordered arrived so the materials to build up the chicken yard are coming together. This will give them lots of room to wander well away from my gardens. Also, a side note on the avian flu. It has been detected in wild ducks on the eastern shore of New Hampshire. Close but not very close to me. And a good time to put the bird netting up.
 
We process 25-30 Cornish Cross chickens each year. My husband and I do it in 3 days. We pluck them because we like the skin.
I had Bresse chickens and was so excited for a dual purpose breed. It was total hype, it grows so slowly! It was tough and chewy and it tasted just strange, gamey.
I'm getting Chantecler chicks next week. I really hope it works out as a faster growing dual purpose meat bird. We need a lot more chicken to harvest and I love the idea of hatching meat birds myself.

Grab a post pounder. You can rent them from HomeDepot if you don't want to buy one. VERY handy and worth EVERY penny. Gets the posts in straight and fast.

I was just reading that they've found it all around me in ducks. Contemplating my options here. My neighbors all feed the birds & I have seen a duck or 2 in the wetlands in my back yard. My run is covered, but the little song birds can get thru the netting. I don't really want to lock them all up in their small runs, but I might.

Does anyone say how long the outbreak could last, or is that not anything they know? Like in humans we have a flu season, is it the same with birds? Is that a dumb question, lol?
