We make a lot of pico... we've done it both peeled and unpeeled. Unpeeled is just fine.I am trying my hand at making Pico De Gallo. Iām wondering if you really have to peel the tomatoes or is it okay to leave the skins on? Itās such a chore to skin all the smallish Romas I have.
If you have the freezer space, you can just freeze them. I like to freeze a few bags of them and pull them out for pasta dishes through out the year. Lemon basil pasta with popped tomatoesI have a gazillion small tomatoes... About walnut sized. I don't know what to do with them.... Suggestions?
I don't eat enough salad to use them up.
If you freeze them and then thaw them the peels just fall off. Or you can process them with the skins on.Don't you need to blanche them first? Seems like it'd be a pain to peel them when they are so small
If you are canning sauce anyway just pop them in the blender and run them through the food mill to remove skin and seeds . More sauce .I have a gazillion small tomatoes... About walnut sized. I don't know what to do with them.... Suggestions?

I can relate... It was in the 50s this morning. Chilly enough that I needed a jacket. Today has been BEAUTIFUL outside. Sunny, mid-70s, with a gorgeous breeze. Picture perfect day.It's here, false fall..a trick of the seasons but I'm going to enjoy it until autumn truly sets in. Today the high is 76(I live in north Alabama this weather is insane) its sunny, breezy and I have already harvested some arugula and some other small herbs and greens. The last of my salad peppers were plucked and the sweet potato debate continues lol. Though I did almost step on a surprise today! One of the girls left a pretty green blue egg on the step. Hmmm better make the boxes more comfy so they use them

By the end of the week, it'll be near 90 again and no rain in sight for 10 days. We've already not had rain in over a week.... But at least it isn't hotter than Hades with everything dead and dusty.
