I've thought that a freeze drier would be GREAT for onions, garlic, and potatoes. Hubby doesn't think it would be worth the cost.The amount of onions, garlic, celery and potatoes I have done is INSANE. With just two of us here, I can just pull out what I need for one meal, or one person, and nothing is wasted.

They do look like potato beetle larvae.Found what I think are potato beetle larvae chomping on my eggplant. The potatoes 5 feet away is completely untouched
What are the reasons others don’t like this method? Can I safely assume the texture of the final product is different.You are lucky! I core mine and put them in the freezer in gallon ziplock bags ..take out all of them the night before I want to can and let them dethaw. The skins slip right off and the all the water separates from the tomato. Then I can a big roaster full at a time.Some people don't like this method, but it works for me!
Been there. I chopped 20 pounds of onions one day. I had to move the operation to the deck. OMG, the tears were rolling and once they start, you can't stop them!Speaking of garlic, I spent the day cleaning up my garlic bulbs, getting them ready for storage. I plan to freeze some this year. Same with the multiplier onions. I'm dreading doing the onions. They're strong.
