What do you do with your Eggs

This may sound very glib but I am new so please bare with me. My chicks are too young yet but have to ask. What do you do with the eggs after they have layed? Do you keep them out for a while or put them straight in the fridge?
Also, do they have a longer shelf life than store bought eggs?

Thanks Sherry. Fresh is awesome! But sometimes we will not be able to eat right away. How come the washing makes them not last?
 
lots of people on BYC say they don't wash and don't refrigerate if clean, but wash and refrigerate if the eggs need it. I have followed that advice. if not washed there is a natural bloom on the eggshell that acts as a preservative; it helps the chickies grow. if you boil fresh eggs you should search around on how to do it because if you do it the normal way the eggs will stick to the shell unless they are about a week old. I forget the procedure, I think it involves ice after boiling.
 
I collect my eggs throughout the day and keep them in a bowl until the chickens are put away for the night, then I count them (because I keep track of production) and then put them in containers, date it, and refridgerate them. I give my family and friends all the eggs that they want. They usually give me "something" for them, but it's not a neccessity. I always keep eggs for our family that are 2 weeks old for hard boiling, devilied eggs, egg salad, etc. and we make alot of breakfast dinners, pound cake, custard, and noodles to use up our eggs....

Still, that doesn't keep up with our production rate...currently I have roughly 9 dozen in my fridge. So it's hard to use up all our eggs. We currently have 19 laying and are getting 17-18 eggs a day.
