What do you like on your omlets?

I don't eat eggs due to the extreme cruelty done to laying hens in factory farms, but now that I have chickens that free range all day I have decided to try eggs. What do you like to eat on your omlets? Any special recipes out there? What is super nummy with eggs?

I've made an omlet with parmesan cheese,a little swiss cheese and provolone cheese, saute'd onions and mushrooms , the provolone made the house smell pretty bad

Italian sausage, fresh tomatoes & chopped basil with mozzarella - pizza omelet!

Try a jelly omelet: I like apricot jelly inside and sprinkle with powdered sugar before serving.
Orange marmalade is good this way too.
Or mix the jelly/marmalade with cream cheese - about 50/50 - tastes like a danish sweet roll
Gee, I haven't done this for a long time...guess what I'm having for dessert tonight?

Bacon and tomatoes. Preferably freshly-picked tomatoes from your own garden.
