what effects egg flavor?????????????

Flax increases the good omega fatty acids in eggs, so they're more nutritious. So does letting them eat grass. Flax is only a problem for egg flavor if you feed way too much of it. If you keep it to 10% of the diet it should be fine.

Green feed, like grass and dark leafy greens, make the eggs taste better and also increases the good nutrients in them, like some of the vitamins. It also makes the yolks more yellow and even orange.

I've read and heard that onions or garlic can give the eggs an off flavor. That may depend on quantity, too.
 
Okay, this can be construed as seriously gross, or it can make sense...my horse trainer has chickens and she used to give her eggs to me on occasion. These were the most robust and flavorful eggs I have EVER had and hope my girls can produce similar to this when they begin. The secret my trainer had, and I really hate to say this, is that her girls roamed her 20-acre horse ranch and had access to manure in abundance. All of the horses were fed pellets or quality hay...so in short the manure was "rich". Great for composting!!! But also great for the eggs. So now, in that I know what my horses eat, I let my girls have access to the manure, splitting it between my compost pile and the coop. So far, they think this is the best day when the "poo is falling from the sky" so to speak!!! :)
 
cabbage makes eggs taste fishy. I gave my chickens a head of cabbage each week hung on a chain, they loved it and ate well off the heads. but my eggs began to taste horrible, fishy yuck. I was beside my self thinking something was wrong with my chickens, in fact i posted a thread on why is my chicken eggs tasting fishy??? so i decided to stop all treats, and then slowly add back a certain veggie . my eggs got to taste awesome again and then the cabbage, yep it was the cabbage. when they got back there usual cabbage the eggs began to taste off . since no cabbage my eggs are wonderful. they free range several hours a day and eat goodies and good food ( organic ) and all is back to normal.
 
Usually people only have issues when they feed a huge amount of one thing. Feeding a balanced diet is the best idea anyway. Chickens are meant to eat a range of things. My Grandma always said "everything in moderation!" (not that she was talking about chickens per se.)

Feeding too much fish scraps can affect flavor. Some friends of mine were feeding a lot of them and their customers started complaining about the strong flavor. However they still feed quite a bit, since it's such a great source of protein, they've just backed off a little and that took care of it.

This is very interesting. Thanks for mentioning it- I will avoid growing cabbage for them.
