This little guy was so close to hatching, I'm not sure what happened. His organs (looked like they were) were growing out his bottom.

Looks like he needed another day or two before hatching. That isn't his organs. that is the yoke. Just before hatching they suck that up into their tummy and it leaves just a little belly button. Looks like the yoke is partly sucked up into his tummy already. Sad.
How many days was it in the incubator?

Well our white silkie went broody on a clutch of 6 eggs and anywhere in between that time 3 eggs were laid (by another chook). We put together a homemade incubator and they were doing fine up untill our other chook went broody. When she went broody we thought that it was better and now that i think back I think it was taking the eggs from the bator and putting under her that killed them. out of three, looks like we will maybe only get one. The third one died after about 10 days in the bator. But the only egg left has no movement. Would I be able to put a stethescope to it and would I hear a hart beat?

Sorry you have had such bad luck.
I agree that that is the yolk which has not been fully absorbed and hatched too early.
A stethoscope may enable you to hear the chick trying to break out....tapping, but you won't hear the heart. If the chick has broken through the internal membrane it may cheep. The egg will probably move if it is near to hatching. However, if there is no sign of movement on candling it may not be alive....sorry.
