What is a breed that is a good layer and has a good temperment?

Out of all mine (listed below) my Buff Orphington is the sweetest and she is faithful with an egg every single day

Part of what makes any chicken mellow is breeding and part is handling. We have several breeds that are considered flighty but my children and I can pick them up anytime because they were handled daily since hatching.

Having said that some of the breeds that are generally considered the nicest with good egg laying are Australorps, Buff Orps, Barred Rocks and the Sex Links.

Some of the more flighty breeds are Leghorns and Hamburgs.

I'd vote for Barred Rocks. All of mine have been great layers of large brown eggs (even into 'old age' --- my 2 oldest hens recently passed at 12 and 13 and I was still getting 2 eggs from each of them weekly at that age). They have had great dispositions. They are great in a flock, not so dominant / strong-willed to be a problem, but not door-mats either.
Just great all-around and pretty to boot.
If you want a breed with hens that will go broody and hatch eggs, I wouldn't recommend BRs. In over 13 years of keeping BRs, I've only had 1 go broody.

I like black australops, and buff orphingtons, both are decent layers and usually not agressive. I have had a bunch of aggressive RIR roosters, and also some agressive barred rock roosters. I also had good luck with golden comets. I dont tolerate aggression in any animals I keep.
 
I have a mix of alot of birds. . . . . Astrolop's,Giant Black Jersey's,Rhode Island Red's,Buff Orphington's,Dominque's,
Bardrock's,Delaware's and Aracuna's.
I DO NOT like the Delaware's. Rooster's were somewhat aggressive and the hen's are nosey and always in the way when I don't need them to be.
I DO like the Buff's and the Aracuna's where temperment is concerned and they are good layers as well.
While the Buff is on the bigger side,the Aracuna is on the smaller side but both have such nice and quiet personalities and will allow me to pet on them much more so than any other bird I have.
