What is a good age too slaughter a jersey giant?

I have jersey giants, and i waited for that 14 to 16 weeks too slaughter, but they looked very boney. I have had these guys now for about 2 years now. i have found waiting till they are 6 months of age has had the best results for the most meat but seem chewy yet not tough. is there a way too speed there meat growth?
 
Hi. I'm new to JG but butchered some at 18 weeks. They weren't a bad size but only maybe 5 lbs dressed for the roos. They are suppossed to put on their bulk later than most. They will never have the amount of meat that a cornish x does. Dual purpose birds are going to have a different texture than most of us are used to. With older birds, slower cooking is usually recommended.
