What is a good processing age?

This is my first try at meat birds and so far can't believe how fast they grow and don't want to miss that window of opportunity of the best time to butcher. I've seen some who process at 5 weeks, some at 7 or eight weeks. At what age is a foolproof age to process cornish rocks?

put a tub on a scale and zero it out. put an average sized chicken in to get the live weight. figure on about 70 to 75 percent of that for dressed weight. when they get to the weight you want then fire up the scalder and sharpen the knife,
 
I started butchering mine at 38 days, found one to be 3 kilos which is a full half kilo+ heavier than the normal commercial weight here. Some folks want birds at 2.2 kilos, some at 3+. Just depends.
