I have been trying to figure out what breed my roo is. I thought he may be a Leghorn, but he looks a bit like an amber white. He and I have had a couple rough patches, but have come to an understanding. So, I'm going to keep him around. But I have no idea what his breed may be.

Where did you get him? He could be a mutt, or it's possible he's an amber white or other hatchery hybrid. Either way, I don't believe he's a pure breed.
He was given to me when he was about 8 weeks old. He was solid white then. He is about 28 weeks now and his feathers have changed color. Well the feathers on his neck and back. They are now an almost blond color with a couple of dark reddish brown spots. His beak has a dark streak down the side of it. He was a bit of a jerk at first, but he is starting to mellow out. He came together with my easter egger hen, they were bought together from the same bin at Tractor Supply.

If he came from Tractor Supply, then I would guess you are correct and that he's an amber white, amber star, or amberlink. TSCs tend to like Hoover's Hatchery, which has amberlinks specifically, but they're all the same type of egg laying hybrid and if you describe him as any of those, people should understand what you mean. 😊
