if the major condern is cholesterol, I did read about a study that says while the cholesterol is higher, the lecithin content of duck eggs is also much higher and that seems to keep the cholesterol in suspension rather than settling in the arteries. don't have a reference handy for that, but if you need it I can see if I can find it.
