I was told she's an Araucana, but so far either she isn't laying, or she is laying brown eggs....

Doesn't look like an Araucana. Araucanas are rumpless tufted..

She's probably an EE, not a true Auracana or Ameraucana, but a mix. I don't know if the EE mixes will always produce colorful eggs or if some produce regular brown. It probably depends on which gene landed where.
