What is your favorite Shredded chicken sandwich Recipe?

Hey guys just thinking about dinner tonight and was thinking about shredded chicken. Whats your favorite recipe that you make? BBQ? Chicken stock? let me know!

simmer whole chicken breast until just cooked through - cool - shred
lemon zest from one lemon
juice from one lemon
shmaltz (the fat skimmed from the top of simmer water for breast)
Fresh Basil - a full handfull of leaves slivered
Pickled jalapenos - one handfull chopped

mix it all together and let chill all day - no need for mayo, the schmaltz keeps it together

serve open faced on half a toasted bagel - first spread a good layer of cream chees on the bagel

this is the best and heathiest chicken salad you will ever eat!
