What killed my hen?

I had a full grown (1 year and half old) buckeye hen. I found her in the coop with only the skin and tissue eaten from her neck and her eyes gone. I live in Kentucky. Only predators ive seen up my way is possums, coyotes and hawks. The coop is coyote proof and hawk proof. It had to be something kinda small. What only eats the neck and eyes and leaves the rest of the bird. I need to know what I'm fighting here.

The flesh from her neck was gone down to the bone. The rest of her was fine. Ive checked and nobody is sick. She was fine earlier. This happened during the day. I had a old hen die of old age a few months ago and the other chickens didnt do her that way.

Maybe a weasel? Or raccoon?

Than I'd guess it was a weasel too. They are pretty small.
