It's probably a weasel from my research weasels are like mice able to get through chicken wire and tight spaces. They usually mall or tear up the head on a bird. from what u have described I had 4 chickens they were not eaten just chewed on from the chest and up. Weasel have been known to be devil or the vampire scientists have discovered that they go for the neck. Most say they are like leaches. I'm pretty sure there is something in them that's makes them thirsty. What I'm getting at they could be blood thirsty like a vampire. (I couldn't squeeze any blood out of my chickens= they are vampires.
