I recontacted the seller which is Bald Hill Poultry. She said the name was "Fiesta Cha chas".

That's the only thing I can find relating to the name Fiesta Cha Cha.

i looked at her pics and what she is showing looks like a mille fleur cross maybe. she does mention its her own breed

I kind of like aoxa's idea, maybe the breeder is giving you a suggestion of what to do with the extra roosters... I wonder what came first, the recipe or the breed .....

Thank you for the comments. I also thought the brown speckled looked kind of like a Mille fleur. Chickens must be like people: they come in a wide variety of colors and characteristics.
