I just want to put in a plug for a well-bred Standard Poodle.
Mine is 85 pounds, protective as all get out with me, but will stand over my parrot when the bird flies to the floor to make sure the parrot doesn't accidentally get stepped on. He'll also stand stock-still while the chickens come foraging right at his feet.
They were bred to be hunting and water dogs, and if you think they're fou-fou, let me tell you that 85-pound teeth are a mighty deterrent. Mine put three drunken guys with guns back in their truck when we lived down South.
Truly great dogs, and so under-appreciated. Just don't buy from a puppy mill -- find a reputable breeder.
