You could try getting two ducks of the lower end of the laying spectrum... from what I'm reading runners, cayugas and welshies typically lay less eggs. I wouldn't get small breed ducks for your average sized drake.
I have 4 laying ducks but I don't eat the eggs because I don't really like eggs... they're mostly pets at this point. I feed the eggs to the chickens (egg shell are great for calcium), and use them for baking.
EDIT: A drake may not be satisfied with just one hen. Ducks tend to overmate and you don't want that one bird getting the brunt of a hormonal duck in Spring!
