What kind of predator does this?

Weasels have a taste for not only the blood of their prey but for internal organs in particular liver.

Most folks who have lost chickens to weasel do not leave the carcases lying around so they rarely see the return visits to the same kill.

how about a rat i had one in my chicken house and he got 4 bantams and a couple of baby chicks before he was discovered i found the dead bantams with no heads and yes the rat was seen when we moved the chickens out and began pulling down the wall insulation the rar did not get any of my full size chickens

the rat dug holes in the dirt floor which is now concrete

Agree could be a mink, they kill and eat the neck and crop area. Coons do also but suprise it only killed one.

San Diego is not in the range for mink. It is in the range for weasel.
