What kinda wood to use building your coop

Yes pine should b fine for a chook coop actually. Cedar and red wood too. You could even use bamboo. Yeah No need for the more expensive ones folks use for furniture ect..
Would not recommend Eastern Red Cedar due to it oily nature. If you don't seal it , it will soften any poly or varnish you use. Western Cedar is great and doesn't have the oils to bother anything. Eastern Red Cedar is great for outside use like fence posts. Pine is fine. I used treated pine for my joists and run framework.
 
Your choice will also depend on how much you want to spend. Lumber is a commodity, and right now, due to the pandemic, prices are at an all time high. Every carpenter and handyman(person) is saving scraps we normally would throw away. So regular old pine will be cheapest. You can always treat it yourself by painting it with Linseed oil to waterproof, and then paint over the exterior portions, . Thenyou will get a structure that lasts. In extreme cases I have used Spar Varnish for waterproofing, it's what is used on marine wood to seal it from the elements.
