What makes a Heritage Breed?

A coop thread I was on got off track with my mention of heritage breeds. I am rerouting that discussion here.

I have received most of my information on heritage breeds from The Livestock Conservancy website. Yes some of the info is vague. Yes I interpreted it to mean that they needed to be free-range. However I did find in a section on what you need for chickens is a fenced range. So I guess the question now becomes what the minimum size that fenced range must be. Keep in mind that another section of the website does state that their leg strength must be put to the test by their pastured management. So to me that means a large area, not something easily made predator proof.
