I prefer any method that results in the quick disconnect of the central nervous system. Axe, knife, scissors or the like. I Co2 gas mice as it is an approved method, but if there were only a few to do, I prefer the cervical dislocation method. With Co2, it is painful to watch them gasp for air and then pass out. With the cervical dislocation, it's a quick pull and done. Co2 is easier on the humans, but I think it's harder on the animal.
 
I agree w/ rancher hicks. I don't even like DH to do it. And no matter who does it I don't want to be around. I know these things need done at times but I don't have to particularly like it.
 
I didn't see the gasping- I used the dilute method, where you use a small amount of vinegar, and then add more after it goes to sleep- weak amounts of CO2 are used as anesthesia regularly, though the higher concentrations cause burning in the respiratory system- as described on the site, it doesn't cause gasping- in my experience.

Then again, I only did it once, but I followed those particular instructions, and it was very humane.
 
I have my DH do it when he is here --- we had to do this this morning with a chick that hatched last night. I put them under a broody and one got its head mushed and beak ripped off. With chicks we just take a shovel and a very hard whack and they are dead. NO twitching or anything. Dead. Then bury it right there. It dosen't bother me much to cull an adult chicken but so sad when it is a fluffy little chickie baby.

-and for adults we chop heads off with an axe - best method IMO
