what is that? looks like a colony of something growing in a petite dish.

The chalazae (plural) are rope-like structures made of protein that act as a support system for the yolk. It keeps the yolk suspended in the center of the egg and safe from pressing against the shell or settling on one side of the egg. When cracking an egg, there's really no need to remove the chalazae. Its fine you can eat it.

I think the OP is talking about the stuff that looks like dry chicken feed, not he white cloudy chalazae.

Looks like a meat spot to me. Sometimes stuff in the body cavity sloughs off and enters the hen's internal egg making. It winds up in the egg. Or maybe something sloughs off in the actual egg making factory. This link talks about it.

It's not that uncommon. As long as it is a fairly rare occurrence it's not a big deal. Some hens are more prone to that than others.

Excess calcium goes on the shell, not inside.

Would be good to take a pic on a plain white surface, tho nice focus in that pic.
Then cut that lump in half and take some more pics.

Squish some of the small white spheres, I bet they are a bit 'crunchy' or 'chalky'.
Those small spheres do look like excess calcium.
Most often they are on outside of shell, but they can be inside an egg.

Meat spots are from sloughed off tissue.
Blood spots are from a broken blood vessel when ova releases from the follicle.
