What part of the egg do newly-hatched chicks eat?

Hi all!
For the life of me, I can't remember if newly hatched chicks eat the egg yolk, egg white, or both. This is probably a really silly question, sorry.
Another question, how long can a newly-hatched chick go without eating/drinking?

They absorb the remains of the yolk before hatching and that can sustain them for up to 3 days. Our babies we just hatched have eaten like horses the day after hatch, but if necessary they can last up to 3 days.
