What should I do if I have multiple eggs and only one is ready for lockdown?

You're going to have a lot of problems then, they need different humidity levels. You won't want an egg that is only a week old at 70% humidity. Can you buy another incubator?
I've got the other incubator built. I'll let it get up to the right heat. Do I need to get the humidity that high or is it ok if I wait until tomorrow and keep the humidity at 40% today

if you are setting the eggs that are in lockdown the humidity should be at 60-70%.

As I understand it...

If the humidity isn't high enough for the lockdown, the hatchlings can be too dry and/or suffer shrink-wrapping (and can't escape the membrane).

If the humidity is too high for the 2-week old eggs, they can develop differently, which can lead to having membranes that are too thick, etc.

So you have a trade-off. I still think my earlier suggestion is best...

But others here have way more experience.

Best thing to do is start weighing the eggs with scales and tracking the aircells

That way you can lock down the first egg normaly, then after its hatched manipulate the humidity so the aircells can catch back up to their normal developenent
